Apricot Chicken

During the week, cooking an actual meal can be somewhat of a challenge after working a 10-hour day. We're all about dinner's we can either shove into a crockpot on our way out in the morning before work, or something you simply mix together and pop it in the oven and forget about it for an hour.

This simple apricot chicken recipe can either be cooked in a crockpot on low heat all day or baked in the oven for about an hour, whichever you prefer.

  • 4-5 boneless, skinless chicken breasts (we prefer using boneless breasts, you can also use drumsticks or thighs, whatever you have available really.)
  • 1 cup apricot preserves
  • 1 cup catalina dressing
  • 1 package dry lipton onion soup packet
  • 1/2 yellow onion, chopped (optional)

Mix all the ingredients in a bowl or if you're lazy, a food processor. Arrange chicken in either a crock pot or baking dish. Pour mixture over chicken.

If baking in the oven, preheat to 350º and bake, covered for 50-60 minutes. If using a crock pot, cook on low for 8 hours, stir prior to serving. Can serve alone or over your favorite rice.
