Healthy Snacks: Turkey Rollups
Turkey Rollups
Once again, I’ve found myself having exhausting 13-hour work days. Between meetings, projects and driving all over the place, I’m just done at the end of the day. I don’t have the energy to cook dinner, let alone figure out what I’m going to do for lunch the next day. So when I was inspired by nuts.com to share a quick and easy healthy snack, it was a welcome challenge to get back to the basics of simple and healthy meals.
After going through my pantry and the bins in my refrigerator, I was once again faced with the realization that I needed to go shopping. Somewhat robotically, I pulled out some sliced turkey and an avocado before realizing I had everything I needed for one of my easiest and simplest snacks—there’s no cooking required!! I can quickly run to the kitchen, put these together and get back to Phantogram radio on Pandora (seriously, the song Bill Murray is like crack, so addicting).
Ingredients:
- sliced lunchmeat (I prefer turkey, but choose what you like)
- sliced avocado
- sliced bell pepper (I usually use a red one)
- optional, sliced pepperjack cheese
Directions:
Take your slice of lunch meat, place an avocado and bell pepper slice inside, and wrap it up. If you’re using the cheese, stick that in there too. I’ll usually make two or three, grab a 1/4 cup of almonds and get back to my desk.
