Barbecue Naan Pizza

I don’t know about you guys, but so far 2016 has been absolutely nuts work-wise. Between being sick (thanks hubby) and an extremely heavy work load, I’ve been finding it challenging to get everything accomplished in one day. I’m not going to lie, there’s been a few nights where I’ve had a case of the f***-it’s and had cereal or peanut butter and jelly sandwiches for dinner because that’s all I had the energy for. 

Last week, on my way home from work I realized that we were completely out of bread and milk, so unless I was going to lower myself to eat peanut butter straight out of the jar, I needed to stop at the grocery store. There’s nothing worse than stopping at the grocery store when you’re tired and hungry. It’s just dangerous.

After being totally cornered by Valentines Day candy, I headed straight for the bread section to get what I had come in there for before I succumbed to any more impulse purchases. As I frantically searched for my favorite bread (with no success), a package of Stonefire Naan caught the corner of my eye.

Last summer, I was on a naan kick. I’d eat it with left over indian food, smothered with my favorite Skinny Taste buffalo chicken dip or use it as bread to make a sandwich. I gladly picked up two packages of naan and scurried home with my chocolate. If you know me at all, the first thing I did when I walked in through the door was open a bottle of wine. Peachy Canyons Ms Behave to be precise. Since I'm talking about wine, I'd like to add that this specific Malbec was one of my favorite wine discoveries from 2015, along with the bottle listed below (there's a bit of a price difference, too.)

For this particular recipe, I used the Garlic Stonefire Naan, available at most grocery stores.

With one of my favorite Malbecs in hand, it was time to figure out what in the hell I was going to cook for dinner while my husband whined that he was starving to death… thinking of my favorite Malbec pairings I thought barbecue sauce! Recently I’ve gotten into the habit of making my own barbecue sauce, but if you’re in a hurry, just use whatever you have stashed in your refrigerator.

Ingredients

  • 1 package of naan
  • 1/4 cup barbecue sauce
  • 1/4 cup shredded mozzarella cheese
  • 1/2 small red onion, sliced to your liking
  • 1/2 cup leftover barbecue chicken or sliced ham (or leave meat off completely)
  • 1 tablespoon chopped cilantro

Directions

  • Preheat oven to 400º
  • Apply thin layer of barbecue sauce over naan, leaving about 1/4 of an inch on each side
  • Sprinkle mozzarella cheese, red onion, whichever meat you’re using, if you’re using it followed by the cilantro.
  • Bake on a cookie sheet for approximately 12 minutes until the cheese is lightly bubbling.
  • Remove from oven, slice and serve with a generous glass of your favorite Malbec!

Obviously you're going to be extremely happy if you find yourself the biggest wine glass you can find in your house. Select something that pairs well with barbecue, such as malbec.

If you've got an extremely picky pizza person in your household I've got some good news: my husband who is a pizza snob devoured his pizza, and not just because he was suffering from low blood sugar due to an unwillingness to fix his own dinner. Since making this the first time, I've made it two other times using different flavors of the naan bread, and I have to admit, the whole grain version wasn't half bad and those of us who like nuttier tasting breads will surely enjoy it.

What's most fun about this naan pizza is its versatility! Use whatever you have at hand—roast beef, oven-baked bacon or ham, sausage, different cheeses, artichoke hearts, bell peppers—the sky (and your taste buds) are the limit!

P.S. The chocolate was pretty darn delicious too. Have to hide from hubby...
