Easy Sunday Routine: Chewy Chocolate Chip Cake Mix Bar Cookies & Billions
I’m not the type of woman who gets obsessed with television shows, but something about Billions has me hooked. If you’re unfamiliar with Billions, it’s on every Sunday on Showtime after Shameless. You know, when The Affair isn’t on.
Typically, I’m not into this kind of show, but Billions is somehow different. When the opening scene of a show has a grown man gagged and bound being dominated by a woman, you can’t help but continue watching. You later learn that he is the U.S. Attorney for the Southern District of New York (played by Paul Giamatti from Cinderella Man) going after a badass hedge fund king (Damien Lewis from Homeland), who you don’t want to like, but can’t help but root for.
It has some slow moments where if you aren’t in the legal or trade industry you’ll struggle to pay attention, and other moments where you don’t want to blink because you’re afraid to miss something awesome. In Billions, you seem to have everything that every American dreams of: private jets to rock concerts, multimillion dollar mansions in the Hamptons, raunchy sex, the trophy wife (or husband), and most importantly, power. Which I think, at the root, is what most people want in life, whether it’s financially or in the bedroom.
It’s vulgar, corrupt and completely unfamiliar to me; which I love! You’ve got a cocky attorney with a powerful wife who is basically a life coach at Axe Capital, who moonlights as a dominatrix (Maggie Siff from Sons of Anarchy, I miss Jax) and a seemingly untouchable billionaire with a potty mouth and a hot wife (Malin Åkerman from The Heartbreak Kid.) It’s a game of cat and mouse, and it’s sure to please you and your husband once the kids have been put to bed.
Sundays are a relaxed day around here. Usually I try to cook something in the slow cooker or in my beloved French Oven so I can enjoy the majority of my day, either sinking my teeth into a good book or spend the afternoon wine tasting at a new (to me) winery. Then in the evenings, we tend to catch up on our shows from the week and of course our can’t miss shows like Billions. TV night wouldn’t be complete without some kind of dessert that can be easily be put together. These bar cookies couldn’t be any easier if they came out of a box!
…Technically, they do come from a box. The dough will not be cake-like, and it won’t be normal cookie dough either. But, they will be delicious and chewy, just the way we like them!
Ingredients
- 1 cake mix (chocolate, yellow or white)
- 2 eggs
- 1/3 cup oil (you can use coconut or canola, whatever you prefer)
- 3/4 cup chocolate chips
- Preheat oven to 350º
- In the bowl of a stand mixer, mix the cake mix, eggs, and oil. Mix until all the powder is combined. Stir in the chips. Spread the mixture evenly in a 9 x 13-inch pan.
- Bake 14-16 minutes, or until light golden brown on top.
- Serve warm or at room temperature with a delicious glass of milk.
