Spicy Guacamole Chicken Burgers
I’ve been noticing a trend with the recipes I’ve been sharing lately: they all can benefit from a healthy serving of guacamole. Perhaps that means my addiction to avocados is a bit more serious than originally thought.
While in New York for Christmas, I legitimately had the most amazing chicken burger in my entire life. They were tender, but crunchy, spicy and so much more addicting than my morning Starbucks habit. I could eat that burger every day for an entire month and not get sick of it. That’s how good it was.
Since not every restaurant is willing to hand over their most-popular recipes, I returned to California with one simple mission: to create a burger that’s almost as good as the original.
You guys. I did it. In fact, it might even be better than the original because clearly, I added something to the mixture that they did not, which means there is such a thing as happy accidents in the kitchen.
Even though my husband refuses to eat guacamole, he said the chicken burger itself is better than any other chicken burger he’s had in his life. Not to toot my own horn, but I’m taking that as a win.
While fooling around with ingredients, I came to a couple of conclusions: do not skimp out on the serrano pepper because you’re afraid it’s going to be too spicy to eat (if you can’t find a serrano, a plain, boring jalapeño is a perfect substitution), and it’s vital that you use ancho chili powder and not plain chili powder—there’s a huge difference in flavor. While I was testing out different versions of these burgers, I fed them to people who typically won’t eat anything if there’s any sort of pepper in it. Nobody cried because it was too hot, and everyone asked for the recipe.
Another lesson learned, these burgers need to be cooked on a grill on your stove. If you attempt to cook them outside on your bbq grill, they lose their texture. Now is the time to invest in a grill from Le Creuset or Staub and never look back, I promise you, it’s worth the investment, especially if you take care of it.
