Oatmeal Chocolate Chip Cookies

A person can never have too many chocolate chip cookie recipes, right?! These oatmeal chocolate chip cookies are one of my favorite cookies to bake for two simple reasons: they’re easy to make and they’re delicious. Is there anything better than warm from the oven, chewy, oatmeal chocolate chip cookies and a nice tall glass of milk? Well, maybe a glass of my favorite wine but that’s a whole other topic.

Growing up, my neighbor made the best chocolate chip cookies I've ever had in my life. I've spent the bulk of my baking years trying to recreate that recipe with no success. They were gooey, chewy and more and more flavorful with each and every bite. Years later, she confided her secret: she kept cinnamon sticks in a jar packed with brown sugar. Genius, right? I never remember to do that, but if you want to try out her trick, it really accentuates the cinnamon flavors in your baking.

This past week on a particularly cool August day, nothing sounded better than fresh from the oven oatmeal chocolate chip cookies. On a whim, I decided to upgrade my usual oatmeal chocolate chip cookies with a bit of cinnamon. However, because I'm me, instead of using cinnamon, I accidentally reached for the cardamom and as I added a dash of it in, panic struck. As luck would have it, I actually like the taste of cardamom. Since I had cinnamon stuck in my head, I still added it and the end result came out wonderfully.

If you're not a fan of chocolate chips (seriously, who doesn't love chocolate?!) you can add nuts, raisins or currants in the place of the chocolate chips. I prefer using mini chocolate chips and skipping the nuts, simply because my husband is weird and won’t eat cookies with nuts in them. If I am feeling adventurous, I will add some white chocolate chips and dried cranberries along with semi-sweet chocolate chips or chunks.

The trick to these cookies is letting them cool ever so slightly on the baking sheet before transferring them to a cooling rack. The bottom of the cookies will be crunchy, while the top will be perfectly chewy! It’s the best of both worlds.

Ingredients & Preparation For Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies
These oatmeal chocolate chip cookies remind me of my childhood.
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1 cup chocolate chips
Instructions
Space two racks evenly in the oven and preheat to 350º and line 2 baking sheets with parchment paper.In a bowl, sift together the flour, baking soda, cinnamon, cardamom, and salt.In a mixer, beat the butter and sugars on medium high until combined. Mix in the eggs and vanilla and beat until well blended.Add the dry ingredients and oats and beat on low speed until incorporated.Drop teaspoons full of dough onto the prepared sheets, spacing them about an inch apart. Bake until the cookies are golden brown, about 15 minutes, rotating the sheets halfway through. Let the cookies cool on the pans for 5 minutes, then transfer to wire racks to cool completely.
