Fall is only a few weeks away, which means if you happen to be one of those people who hate pumpkin flavored everything, you’re about to enter your least favorite time of year. But for the rest of us, it’s time to round up your favorite pumpkin recipes and get movin’ in the kitchen.
When I first began cooking, I took the lazy way out and would simply buy pumpkin pie spice from the grocery store. I used it in everything from baked goods to soups when the recipe called for it. Then one Thanksgiving, years ago, I didn’t have enough pumpkin pie spice to make the recipe so I had to make my own.
Making your own pumpkin spice blend isn’t difficult. It might be a little bit time consuming if you’re having to search high and low for the necessary jars of spices in order to make it, but making it in larger quantities means you’ll have the absolute best pumpkin spice blend just waiting for you in your spice drawer.
Over the years, I’ve played around with various spices and different blends trying to find the perfect combination of flavors. I think everyone by now knows that pumpkin pie spice is a blend made of ginger, cinnamon, nutmeg, allspice and cloves. My version is pretty much the same, except for one addition: coriander!
If you are unfamiliar with coriander, it’s cilantro or dried Chinese parsley and it adds another wonderful dimension to pumpkin pie spice. The addition of the coriander also makes it a more complimentary spice to use on meat. That’s right, I said pumpkin spice can be used on meat. I’ve used it on lamb, dark meat chicken and pork. Sprinkle some of the spice over autumn vegetables and roast them for a tasty side dish or, add a 1/2 teaspoon or more of the blend to your freshly ground coffee in the morning.
If you’ve made our chocolate pumpkin cupcakes before, then you’ll already be familiar with the spices used. To make a larger batch of the spice to keep in a jar, simply follow the measurements of each ingredient, be sure to properly mix them all together until you’ve reached the desired amount.
